Uncle Pedro was the uncle of John McGuirk. He was a highly successful sausageer (person who makes sausages). After his death McGuirk was called to identify his corpse though they had never actually met prior to that point. Initially Pedro considered leaving John his sausage business but reconsidered and instead left him with his last remaining sausage. Despite being nearly six decades old Mcguirk said the sausage was wonderful. He was featured in the episode Identifying a Body and never subsequentally mentioned.
